Quinoa and Black Bean Chili
Ingredients:
1 cup quinoa, rinsed
2 cans black beans, drained and rinsed
1 can diced tomatoes
1 cup corn (fresh or frozen)
1 onion, chopped
2 cups vegetable broth
Spices: cumin, chili powder, garlic powder
Instructions:
Combine all ingredients in the crockpot.
Cook on low for 6-8 hours.
Stir well before serving; garnish with avocado or cilantro if desired.
